Since 1991, the Domaine of Jean-Jacques Confuron has been cultivated organically across eight hectares, boasting a significant portion of old vines, notably in the village of Chambolle and the Romanée St-Vivant, which were planted back in 1929. Grapes undergo destemming and are subjected to a brief fermentation process with gentle punching down to minimize air exposure, eschewing the traditional pumping over method. The winemaking team abstains from post-fermentation maceration, believing that prolonged contact with the skins after fermentation diminishes fruit freshness and terroir expression. Barrels sourced directly from Rémond and Rousseau are utilized at the Domaine, with new wood constituting 50-75% of barrels in general, and 100% for the grand crus.

TASTING NOTES
The nose of this wine presents a floral character, with fewer citrus and spice nuances, instead offering hints of green apple and freshly sliced fennel. The medium-weight flavours on the palate exhibit excellent liveliness, accompanied by an attractive texture. There's a subtle mineral quality that emerges on the moderately dry, clean, and impressively lengthy finish.
