Jintaro began his wine career in the restaurant industry. After his time in restaurants, he enrolled in Oenology school and soon embarked on training in renowned wine regions like Waipara, New Zealand, Burgundy, and Yamanashi, Japan. In 2012, he was drawn to Alsace, where he worked with Domaine Josmeyer and Domaine Hurst. After his experiences at these estates, he knew that Alsace was where he wanted to establish himself. Like many other small, young growers, his career started with purchasing grapes from friends and borrowing cellar space. Today, he produces only a select few wines, but each one is carefully crafted and meaningful.
