Salvioni owns the La Cerbaiola vineyard in the southeast of the commune, a plot universally recognized as one of the great ‘crus’ of the village. Here, tradition reigns supreme. Maceration lasts as long as 30 days, and the wines are aged in six 2,000-liter Slovenian oak casks in the family’s domestic cellar. Aging can be as short as the required two years or even longer if the vintage allows. The result is wines of incredible purity, transparency, and elegance, accompanied by an underlying structure that naturally comes from healthy, old vines with low yields. Salvioni’s wines are a triumph for the region, though the only downside is their limited availability. The Salvioni family embodies the truly artisanal side of fine wine, a rarity in the modern world.

TASTING NOTES
This wine initially presents a ruby-red colour typical of a young Brunello, with hints of light garnet that evolve as the wine ages. The nose offers a blend of floral notes and darker fruits, with oak undertones. On the palate, it is invigorating, with good acidity balancing the ripe fruit aromas.
